I have a garage gym. Half are is used to park my car, the other half for gym equipment and tools. Is this carpet safe / strong enough to park my car on?

This application should be fine as long as you're driving straight into your garage and don't make turns with your wheels.
Can this be installed on a plywood wall?

This should be fine, the tiles are peel and stick so you shouldn't need additional adhesive. You can order a sample to test a small area first if you'd like.
Can this type of carpet tile go over existing carpet?

For best results, apply these adhesive carpet tiles over a flat, level and dense surface. Carpet is not recommended.
